We hate off the shelf salad dressing because you don’t really know what’s in them and what kind of preservatives they use. Sure we can just read the ingredients but half the time we don’t know what certain code words mean. So each time we prepare a salad we experiment with a new kind of dressing. Without further ado, here it is:
Ingredients:
- Quarter Papaya
- 1 cup mint
- 2 table spoon olive oil
- 1 cup water
- Salt and Pepper (to taste)
Blend the papaya and the mint first and then add the rest of the ingredients and blend them together. You can adjust the olive and water quantities based on the consistency. The above quantities makes enough dressing for a salad for two. Suggestions for a the salad are greens, arugula, tomato and cucumber.
